The restaurant was founded by a couple, Marco and Maria. After falling in love and getting married, they decided to open their own pasta restaurant, inspired by their love for each other and their shared love for the traditional Roman cuisine. Together, they created a menu of traditional Roman dishes that celebrated the city's rich culinary history. Marco and Maria's children grew up in the restaurant, learning the art of making pasta by hand and serving customers with a smile.

Whether it's gathering around the table to enjoy a meal or passing down the art of pasta-making to the next generation, family is what makes O'Mato so special. And it's that same love and dedication that goes into every plate of pasta served at the restaurant.

MANUFACTURING

Penne rigate has always held a special place in the heart of the family. They knew that they want to create a pasta that would be both healthy and delicious. After much experimentation and testing, they finally settled on penne rigate - a hearty, tube-shaped pasta with ridges. They used only the highest-quality, all-natural ingredients, including locally-sourced semolina flour and fresh, filtered water. The result was a pasta that was not only vegetarian and healthy, but also bursting with flavor and texture. Customers at their restaurant couldn't get enough of it, and soon penne rigato became one of the most popular dishes on the menu.
